Alex’s Friendship Fruit Salad

This recipe is VERY easy to follow fruit salad. YUMMERS! Get some friends and do it!

Prep Time: 20 min

Ingredients

  • apples
  • peaches
  • watermelon
  • bananas
  • oranges
  • grapes
  • plums
  • grapefruit
  • cantaloupe

Directions

  1. Cut each fruit into bite size pieces
  2. In a large mixing bowl,mix all the fruits together.
  3. Allow flavors to blend for about 30 min

Suggestions:

Squirt a little orange juice in each serving from any extra oranges

Alex’s Ranch Dressing

This recipe is VERY easy to follow ranch dressing recipe. YUMMERS!

makes aprox. 1 cup
Prep Time: 15 Min

Ingredients

  • 1/2 table spoon of dried parsley
  • 1/8 teaspoon pepper
  • 1/4 tablespoon onion salt
  • 1/8 teaspoon garlic salt
  • 1/2 cup mayonaise
  • 1/4 cup sour cream (I prefer Daisy or Vallarta Market brand)
  • 1/4 cup buttermilk

Directions

  1. In a large mixing bowl, the first six (6) ingredients. Stir in buttermilk and mix until smooth.
  2. Allow flavors to blend for several hours (usually about 4 hours)

Suggestions:

Get some chips or veggies (think HEALTHY!) and use as a flavorful dip.

Spinach & Cheese Crêpes

This recipe is very easy to follow and the crepes are so delicious.

makes aprox. 20 crepes
Prep Time: 10 Min Cook Time: 2-4 min per crepe

Ready In: 30 Min
Ingredients

  • 4 cup all-purpose flour
  • 2 eggs
  • 4 cups milk
  • 2 tablespoons butter, melted
  • 1 tablespoon salt
  • Cheddar & Monterey Jack Cheese
  • Fresh uncooked Spinach

Directions

  1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk, and salt, stirring to combine. Beat until smooth.
  2. Heat a lightly buttered griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/3 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. (Don’t worry if they are not a perfect circle.)
  3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side for 1-2 minutes. Serve hot .

Suggestions:

Stack your crepes in a foiled cover plate to keep warm.
Add butter in between each crepe.
Add Spinach and Cheese to each crepe and fold or roll in to a shape (I like triangle shape)
Add a dressing such as vinaigrette or ranch dressing .
Crepes should be thin (Not like a pita or a pancake!).

Crêpes a la Monique

This recipe is from my Grandmother, Monique. It is very easy to follow and the crepes are so delicious. The SECRET is in the thinness and in the BUTTER!
